Food Waste Tracking
Food Waste Tracking
Ready. Set. Record!
For each day during the food waste tracking week, record your food waste. This action accepts one entry per day, so be sure to enter one total for food waste across all of your meals, or weigh all of your food waste once at the end of each day. Please use ounces for unit of measurement.
Cooking
Fruit Smoothies
Freeze fruits nearing their end and use in smoothies. You can even try freezing avocados (see Resource)!
Cooking
Revive Limpy Produce
Rescue limpy produce like leafy greens or carrots by soaking in an ice bath.
Food Systems
Advocate for More Food Options
I will advocate for local and/or organic food options at work or on campus.
Cooking
Save the Peels
When life gives you lemons (or any other citrus peels), use the rinds to make a nontoxic cleaner.
Food Systems
Watch a Documentary about Food Sovereignty
I will watch 1 documentary(ies) about food sovereignty: the right of local peoples to control their own food systems including markets, ecological resources, food cultures and production methods.
Cooking
Cook From Root to Leaf
Utilize beet greens, carrot tops, and herb stems to make a delicious pesto, sauce, or dressing. I will try 3 root-to-leaf recipes.
Cooking
Repurpose Leftovers
Give leftovers a new life! For example, use leftover rice to make fried rice. I will try a recipe that repurposes leftovers 5 times.
Participant Feed
Reflection, encouragement, and relationship building are all important aspects of getting a new habit to stick.
Share thoughts, encourage others, and reinforce positive new habits on the Feed.
To get started, share “your why.” Why did you join the challenge and choose the actions you did?

manuel medrano 6/12/2020 11:24 AMIf you are lucky enough to have a fruit tree or veggie plant and they're producing more than you can consume do not let that resource go to waste. Pick it, box it and contact a local gleaning organization that could pick up the bounty from you to feed the hungry. -
manuel medrano 4/17/2020 10:31 AMMade banana peel tacos for the 1st time, the were delicious, learned the recipe by watching this vid from a local chef "BANANA PEEL TACOS"

manuel medrano 3/11/2020 4:29 PMI have to confess that I found a cilantro bunch that was too far gone to use and now sits in my composter. Goes to the point of making sure we strategically place food in our refrigerators so it doesn't get forgotten. -
manuel medrano 2/16/2020 5:12 PMHaving a small kitchen countertop helps one get creative on how to store food discards. I repurposed a metal reusable water bottle that developed a small hole on the top. The bottle can't hold water but it can hold food discards and luckily it has a wide opening and its tall cylindrical shape takes up little space. -
manuel medrano 1/22/2020 10:01 PMThis time of the year citrus fruit is so abundant you might end up with several bags at a time from generous friends and family. I like to juice & freeze orange and lemon juice to later use in smoothies, don't forget to compost the rinds. -
manuel medrano 1/09/2020 7:34 PMPutting carrots that are overly ripe in an ice bath does work. Using the leftover ice water for plants helps save H20.
