I was making an eggplant dish, and really tried to get as much of the eggplant closest to the stem. The remaining went to the compost, but no joke, In my past non eco challenge life i would have cut 1 inch off the top and move on with my life... :) -

Elaine Sanders 1/27/2020 12:30 PMYesterday, I purchased a loose leaf green tea in the am from a local coffee shop, and i probably made an extra 6 cups of tea throughout the day with my handy electric kettle by reusing the bag. Needless to say i had a nice green tea caffeinated day. -

I thinking ahead of how many days we will be eating in and going out, so we don't purchase extra and sending it to waste... Hopefully by not going to the store hungry will help with that ^_^
