For woody or hardy herbs like rosemary, thyme, sage, and chives, arrange lengthwise on a damp paper towel, rolled up, then sealed in a plastic bag and stored in the refrigerator.     Oh man! Don’t buy watermelon 🍉 during the weigh in part of the challenge! The rinds are heavy!! Good news tho- it will be going in my parents composter!!

    Whoo hoo! Day 1 waste was only 0.2 because the timing of the start day was perfect. Meal planning and food storage was done last Thursday when I picked up my farmers box. If only my numbers could always be this low!!

    I just shared this on my social media page as I continue to see photos posted of completely empty shelves at grocery stores. I can’t help but wonder where all this food will go? Will it actually be eaten? 
    Feel free to copy/paste all or bits & pieces of this for sharing on your pages. 
    Before the pandemic it’s probably pretty fair to say, most everyone wished they had a little bit more time in their busy day. As we step in to the unknown and feelings of isolation and scarcity, please try to take a pause before you buy tons of fresh food just to have it. Currently households generate 43% of all wasted food in America. There are a lot of people in America. We all get hungry. If we currently waste 43% of what we buy and there is always food on the store shelves, why are we suddenly afraid there won’t be enough? Please pause when you are at the store and ask yourself, “Are you gonna eat that?” Better yet, try some meal planning. Per my employer, I am working remote for the next week or two. I gain 1 1/2 to 2 hours of my life back just by not having to commute to work during rush hour. Times that by 5 days in a week equals 7.5 - 10 extra hours of my life gained back. IN ONE WEEK! What a gift! Oh what to do with this gift of time? Better still, check out this EcoChallenge! They provide great tips on how to prep and store food so it lasts longer, recipes, how to compost, TONS OF STUFF!! Challenge a friend, coworker or get your whole family on board if the kids are home from school. Go in your backyard or patio. Start a garden. Be safe. Be smart. And above all L❤️VE thy neighbor. Check in on each other.

    I was so sad today when I reached for my precut butternut spirals.... unbeknownst to me the seal had been either tampered with in the store or possibly got loose in getting my groceries home?? So they were opened for who knows how long prior to my purchase & had turned in to a squishy pile of ick!!  10.7 oz!!! 😩 The saving grace is it will be composted! 🤗😃 But still! Me, my food scale and my hungry tummy were all disappointed!
