    Today is the first day of our participation in this Food Challenge.  I'm really looking forward to it!  I'm going to learn so much!  i'm having surgery on july 8th so i'm not quite sure how much i'll get done for the week or two after it, but i've already decided that if i miss any time, i'll extend my 30 day participation.  I love food challenges

    I"m so looking forward to participating in this challenge!  It couldn't come at a better time for me.  With sheltering in place I know I'm cooking a lot more at home and cooking from scratch more also.  I plan on learning a lot more through this challenge.  I very much appreciate being able to participate in this Ecochallenge.
