McVey's actions
Cooking
Cook From Root to Leaf
Utilize beet greens, carrot tops, and herb stems to make a delicious pesto, sauce, or dressing. I will try root-to-leaf recipes.
Community
Half-Portions
I will ask for half-portions options at restaurants and cafes to minimize food waste.
Shopping
Keep it Local
Purchase local, seasonal produce, which will likely stay fresh longer as it was picked more recently than supermarket produce.
Shopping
Shop More Often
Grocery shop more often, and buy fresh foods in smaller quantities.
Shopping
Skip the Cart
Bigger carts make us feel like we need to fill them! Use a hand basket to improve grocery store discipline and prevent over-purchasing.
Shopping
Shop the Bulk Bins
Grains, nuts, and other dry goods are often sold in bulk bins that allow you to purchase only the quantity you need.
Planning
Eat the Leftovers
I will plan an Eat the Leftovers night by creating a tasty “smorgasbord" or using a recipe that repurposes leftovers. I will eat meals using leftovers.
Planning
Meal Prep Mania
I will meal prep meals.
Cooking
Repurpose Leftovers
Give leftovers a new life! For example, use leftover rice to make fried rice. I will try a recipe that repurposes leftovers times.
Cooking
Swap This for That
Missing an ingredient for a recipe? Check this list to find the best substitutes.
Food Systems
Smart Seafood Choices
I will visit seafoodwatch.org or download the app and commit to making better seafood choices for a healthier ocean.
Food Systems
Advocate for More Food Options
I will advocate for local and/or organic food options at work or on campus.
Storage
Veggie Snacks
Place cut carrots and celery in jars filled with water to keep them fresh, crisp and easy to grab for up to a week. I will properly store veggie snacks.
Storage
Berries
To keep berries fresh, place them on top of a paper towel in a sealed container to absorb excess moisture and reduce chances of molding. I will properly store packs of berries.
Storage
Avocados
Allow green, unripe avocados to ripen on the counter, then transfer to the refrigerator. Once cut, keep the pit in and rub with lemon or oil to reduce browning. I will properly store avocados.
Storage
Apples
Store apples up to 7 days on the counter, then move them to the refrigerator. Keep them away from bananas and avocados as they speed ripening. I will properly store apples.
Shopping
Support Imperfection
20 billion pounds of fruits and veggies go to waste on farms every year, often because they don't live up to the cosmetic standards of grocery stores. Buy ugly produce at the grocery store, farmers market, or sign up for an ugly produce CSA box.
Shopping
Scrutinize Deals
Five bananas for $1 is a good deal only if you eat all five. Many stores offer the sale price even if you buy less than the stated quantity.
Shopping
Tap the Salad Bar
For recipes that call for small amounts of different vegetables, shop at the salad bar to get exactly what you need.
Shopping
Eat Before Shopping
Those who grocery shop on an empty stomach spend 64% more than not-hungry shoppers. Resist impulse buys by shopping with a full stomach. Eat a snack or a meal before going grocery shopping.
Shopping
Shop with Recipes In Mind
Create a shopping list with specific recipes and meals in mind. Purchase only what's on the list when you do groceries.
Cooking
Revive Limpy Produce
Rescue limpy produce like leafy greens or carrots by soaking in an ice bath.
Storage
Asparagus/Celery
Trim the ends of asparagus and place them in a jar or glass with 1-2 inches of water, just like fresh cut flowers. Keep them in the refrigerator. I will properly store bunches of asparagus/celery.
Food Waste Tracking
Food Waste Tracking
Ready. Set. Record!
For each day during the food waste tracking week, record your food waste. This action accepts one entry per day, so be sure to enter one total for food waste across all of your meals, or weigh all of your food waste once at the end of each day. Please use ounces for unit of measurement.
Participant Feed
Reflection, encouragement, and relationship building are all important aspects of getting a new habit to stick.
Share thoughts, encourage others, and reinforce positive new habits on the Feed.
To get started, share “your why.” Why did you join the challenge and choose the actions you did?

McVey Ayres 10/08/2019 7:16 PMI'm confused; somehow I thought I signed up for a 1 week long challenge from october 1 through 7th but I see that people are still checking in. Does anyone know the length of this challenge? :) thanks-
Sarah Feteih 10/11/2019 10:06 AMHi McVey!
The October 1 - 7 dates were designated as the first week of food waste tracking, but the EcoChallenge is open and active until December 2020. You can continue to check in to the site to complete actions and challenges or post on the feed until the next food waste tracking week in January.

McVey Ayres 10/07/2019 7:42 PMThis is the last day of the challenge, correct? Good job everyone. I'm glad I signed up for this it is a really great idea. -
McVey Ayres 10/06/2019 6:06 PMJust more avocado skin getting thrown out today -
McVey Ayres 10/05/2019 9:05 PMFood waste weighed more today because of an avocado pit -
McVey Ayres 10/04/2019 9:51 PMI haven't changed my habits too much (other than learning how to properly store berries and a few other useful tips) during this challenge--I was already very mindful of wasting food--but today I didn't have time to pack my lunch and I ate at La Paloma at USD for the first time. The portions were huge and I totally ate past the point of being full to avoid wasting anything. Next time I will take the suggestion of ordering a half portion. -
McVey Ayres 10/03/2019 8:26 PMMostly just throwing away avocado peels. Weight of food waste is much higher with the pit-- haven't wased edible food. -
McVey Ayres 10/01/2019 10:48 PMChallenge is going well; didn't waste anything on day 1
