    Having a small kitchen countertop helps one get creative on how to store food discards. I repurposed a metal reusable water bottle that developed a small hole on the top. The bottle can't hold water but it can hold food discards and luckily it has a wide opening and its tall cylindrical shape takes up little space.

    Made chicken soup with the Costco rotisserie chicken (that I bought and didn't get to finish) for my husband last week when he got sick.     This past week I de-boned a whole chicken, pan-seared and roasted along with the innards (for my husband). Then I saved the bones and neck for soup stock.
